South Tyrolean apple pancake

Ingredients
1 200 g pack of Leni’s Apple Snack
150 g flour
100 ml milk
100 ml cream
6 eggs
40 g sugar
1 pinch of salt
Butter
Icing sugar
 
 
Method
Mix the flour, milk, cream and egg yolks. Lightly beat the egg whites with salt. Then add the sugar and beat until stiff. Carefully fold the stiff egg white into the mix. Grease the pan with butter. Pour the mix into the pan and fry until a golden yellow. Then turn over the pancake and scatter Leni’s Apple Slices on it. Use two forks to break up the pancake, dust with icing sugar and toss in some butter until the sugar caramelises.
